This recipe is really quick and simple to whizz up on busy mornings. The toppings can be tailored to suit everyone so it’s always a fun meal and a real crowd pleaser!

Superfood Bircher Muesli
Recipe serves 1 person:
1 large apple (cored)
1 medjool date (pitted)
1/2 cup of rolled oats
1 tbsp maca powder
1 tbsp lucuma powder
2 tbsp desiccated coconut
1 tbsp shelled hemp seeds
Nut milk or water
Toppings of your choice
Place all ingredients (minus toppings) into a food processor and add water or nut milk of your choice and mix to a porridge like consistency.
Serve with the toppings of your choice, for example:
cacao nibs, blueberries, chia seeds, pistachio nuts, goji berries…
