Summer Trifle Recipe
With the new season fast approaching and after enjoying a few weeks of delightful sunshine, we have been feeling extra inspired by lots of yummy fruits, barbecue vibes, social gatherings and general summertime joy!
With this in mind, our fabulous chef Nicole has been a busy bee in the kitchen, crafting some delicious, light, raw treats. So we thought we’d share one of these tasty creations with you today.
Forget processed, packaged trifles, full of refined sugar and all sorts of strange ‘ingredients’ that make us feel a little limp. We have a gorgeous, nourishing alternative. Super satisfying, creamy and comforting, but light and full of goodness.
Introducing the Raw Horizons Cherry & Raspberry Trifle…
Summer Berry Trifle
Serves: 6
Fruit Layer Ingredients:
Raspberries 350g
Cherries (pitted) 350g
Strawberries (fresh) Punnet
Cream Layer Ingredients:
Cashew nuts 250g
Water 250ml
Agave Syrup 2 tbsp
Vanilla Extract 2 tsp
Coconut Oil 3 tbsp
Method:
Fruit layer: If using frozen cherries and raspberries, defrost first. Add the cherries and raspberries to a food processor and pulse. Ideally, you want them to be a bit chunky so the cream layer will be able to comfortably sit on top.
Spoon 4 – 5 tablespoons of this fruity goodness into a short tumbler glass (or similar).
Cream layer: For the smooth, creamy layer, take the cashew nuts, vanilla extract, coconut oil, agave syrup and water and add all these ingredients to a high-speed blender. Blend away until your mixture is at a smooth consistency.
Assemble: Spoon the cream layer mixture on top of the fruit layer to the desired amount. Thinly slice the strawberries and place on top of the cashew-cream. The strawberry layer looks lovely through the glass.
Whatever remains of the ‘fruit layer’ and the cashew cream, keep adding layers, making each one smaller and smaller giving your trifles a humble-looking tower-shape. After this, decorate with more berries or however you feel you’d like! Place in fridge to keep cool, (unless eating right away!). Take-out of fridge 20 minutes before serving so the fruit can adjust temperature and taste extra divine!
There you have it… A raw, yummy, show-stopping trifle that is sure to please you and any guests you may be entertaining over the summer months.
